Cold Mediterranean Style Tepary Beans

1 lb cooked tepary beans
3 cups diced onions
1/2 cup olive oil
Salt & pepper to taste
2 tbs minced garlic
1 14.5 oz can of diced tomatoes of choice
1 large sliced zucchini sautéed
2 tbsp minced thyme
2 lbs roasted red bell peppers diced
4 to 6 oz feta cheese crumbled


  1. Combine all ingredients in a bowl and serve cold.
