Sto-toah bahf (Akimel O’Odham for white beans)

2 lbs. white tepary beans (cleaned, rinsed & soaked)
1/2 cup onion (quartered or diced)
1 dried red chile pepper (whole) OR 1/2 cup chopped carrots and/or celery.


  1. Sort and rinse beans.
  2. Add water to cover plus 2 to 4 inches.
  3. Add onions & chiles or carrots.
  4. Bring to boil for 30 minutes.
  5. Reduce heat, cover & simmer for 4 to 6 hours (or until tender).
  6. Great When Cooked In A Crock Pot!
