2 lbs. white tepary beans (cleaned, rinsed & soaked)
1/2 cup onion (quartered or diced)
1 dried red chile pepper (whole) OR 1/2 cup chopped carrots and/or celery.
- Sort and rinse beans.
- Add water to cover plus 2 to 4 inches.
- Add onions & chiles or carrots.
- Bring to boil for 30 minutes.
- Reduce heat, cover & simmer for 4 to 6 hours (or until tender).
- Great When Cooked In A Crock Pot!
